Wild Garlic Recipes

With the abundance of wild garlic around at the moment here are some things you can do with it if you are lucky enough to stumble upon some. I love wild garlic as it goes with pretty much any dish and can be used as any other green would be. Always remember to when picking to be mindful and respectful to Mother Earth. Never pick too much from one patch and only take what you need.

Wild Garlic Sea Salt

You will need

~ 100g Wild Garlic (remove the stems)

~ A tub or box of good quality corse sea salt

Method

~ Rinse the wild garlic and pat dry

~ Place the wild garlic into a food processor and blitz it until it looks like pesto

~ Add around 100g of the salt and blend until it forms a creamy paste.

~ In a bowl combine the wild garlic/salty paste to the rest of the sea salt/

~ Place the combined wild garlic and salt mixture on to a lined baking tray in the oven on the lowest setting for a few hours or alternatively out in the sunshine.

~ One it has dried out and cooled use your hands to break it up. You can pop it back into the bowl if it is easier and then add it to an air tight container.

~ Add it to every dish for a salty garlic flavour, it is absolutely delicious.

Wild Garlic Pesto

You will need

~ 100g wild garlic

~ 50g Parmesan grated (you could add nutritional yeast to substitute)

~ 50g almonds or pine nuts skinned and toasted

~ Olive oil

~ Lemon juice, to taste

~ Salt and pepper

Method

~ Rinse the wild garlic and pat dry

~ Place the wild garlic into a food processor and blitz until its broken up.

~ Add the parmesan and blitz it a bit more.

~ Add the nuts, then add the olive oil gradually until you have your desired consistency. I like it really oily but you may not.

~ Finally add the salt, pepper and lemon

Keep in the fridge in a suitable jar and use in pasta dishes, on tarts, in sandwiches, salads.
